Carving depends on your knife skills. I like to carve &amp; serve at the same time as I like to eat the lamb to be hot &amp; steamy. As for how many it feeds, depends on what else you&#039;re serving with it. My aunt and uncle, who usually host and do the lamb are pulling a &quot;Christmas with the Kranks&quot; and going on a cruise.  Needless to say, the family&#039;s in a panic because it&#039;s so absurd that they would think to do that to us.  We also do Gyros as well because there&#039;s never enough lamb to go around. the rear legs you have to bend back and up otherwise it will be too long to fit in the spit. With the legs bent up, I would say it&#039;s about 1.2-1.4 meters long.
If you look at this picture, when I&#039;m tightening the hardware, I try to push the tail of the lamb as far down as possible.

Stumbled upon your blog simply looking for a spitted lamb marinade and have deligted in reading through it - top job!
I&#039;m doing a spit this Tuesday (Melbourne Cup Day) however i&#039;m forced to simplify it with Terry Shoulders instead of the whole lamb (i&#039;ll save that for when i&#039;ve had some more practice).  4 shoulders, boned &amp; rolled @ 1.5kg each.

To complicate things, I&#039;ll also be using charcoal for the first time as I have historically used Petro Beads in our Weber.

That brings me to my question - any hints on cooking times AND (perhaps more importantly) hints on how to get the quantity of charcoal right?!?

Followed your process exactly..

Started the lamb at noon and took it off the spit at 6:15. I let it rest for about 20 min while covered with aluminum foil. We were 14 adults and 8 kids and there is still some left over. The lamb weighed in at 17 kilo&#039;s. It was outstanding....so my guests said..

For sure I&#039;m doing it this way from now on.

		<description>Hello, im planning on having a lamb roast for my wedding next year, and your method and recipe sounds absolutly perfect.  I was wondering what side dishes would you serve with this feast?  Could you make some suggestions?  If it helps I will be feeding about 200 kiwis.
PS I could tell by your pics that Terry&#039;s death was not in vain...and was  celebrated as a delicious end to a full and prosperous life....lol</description>

I would say the bones won&#039;t lose much weight, so lets say about 60-70% of the weight is meat. Fat melts, moisture evaporates, the only ways I think the weight loss comes from. So, my guess ~20%.</description>
